About Me

I am not claiming to be some nutrition expert, or a chef.  In fact, my major is Political Science, and I am taking my first Nutrition 101 class this semester.  Nutrition and health are simply a personal interest that has morphed into a type of hobby for me, and I have done a lot of summer research on the subject as a result.

This blog is not going to be perfect either.  I am simply a married full-time college student with two jobs... and while I wish my blog could be perfect, I am going to warn you in advance that my school and work come first (but I'm not gonna lie, I like doing this a lot more).  So don't expect too many posts during midterms and finals. :)

This blog is a post-as-I-cook type of deal.  I will make a meal and then I may post it a day or two later. I have found a tremendous amount of joy from cooking and eating healthy and I simply want to share it with others... and I'm going to be learning right along with most of you! I welcome input, so please feel free to leave me comments or suggestions on my posts.

A little bit about what I have to work with......

This is my kitchen.

Left to right: Sink, Counter/Microwave, Stove/ Oven, Fridge

And just in case the last picture didn't do it justice, all the magic happens here...

This is my counter top. This is it.

15" x 26". I measured it.

This is what happens when you are a college student. Everything is tiny, and old... but still cute. Somehow I make it work.

I also have college student cookware. So don't hate on my pink and yellow flimsy cutting boards, or my Teflon pans with metal scratches on the inside. That's how I roll.

So hopefully this will give you all some encouragement.  If I can cook it with my cute, old and cheap ghetto stuff, so can you!

Happy Cooking!
